Provoleta: Argentina's Grilled Cheese, from Our Parrilla

Before the chorizo, before any cut of beef, a serious asado opens with provoleta: a thick round of provolone-style cheese that goes directly onto the grill and comes off blistered, bubbling, and crusted at the edges. Guests at our asado fight over the last wedge every single night.

I grill one every evening in Palermo Soho. This is everything you need to make it at home, with or without a fire.

What Is Provoleta?

Provoleta is an Argentine invention: a firm, low-moisture variant of provolone made specifically to survive a grill. Regular provolone melts into a puddle. Provoleta holds its shape long enough to build a golden crust outside while the inside turns molten.

It is served straight off the fire with crusty bread, a drizzle of olive oil, oregano, and sometimes a spoon of chimichurri. You scoop, you stretch, you burn your mouth slightly. That is the correct experience.

Outside Argentina, look for "provoleta" at Latin markets. If you can't find it, a thick slice of aged (not soft) provolone in a cast-iron pan is the honest substitute.

Ingredients

  • 1 round of provoleta, 2-3 cm thick (about 250 g)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (ají molido if you can get it)
  • A drizzle of olive oil
  • Crusty bread to serve

How to Make Provoleta

  1. Get the surface properly hot. Embers with a medium-hot grate, or a cast-iron pan on medium-high indoors. A cold surface is how provoleta becomes soup.
  2. Dry the cheese. Pat the round dry. Some asadores leave it uncovered in the fridge overnight; a drier surface builds a better crust.
  3. Sear without touching. Place the round on the grate or pan and leave it alone for 2 to 3 minutes, until a golden crust forms underneath and the edges start to bubble.
  4. Flip once. One confident flip with a wide spatula. Cook 2 minutes more until the second side crusts and the centre goes visibly molten.
  5. Season and serve immediately. Oregano, pepper flakes, a thread of olive oil. Straight to the table in the pan, with bread. Provoleta waits for nobody; it firms up as it cools.

Total time: about 10 minutes. Serves 4 as a starter.

The Mistakes That Ruin It

  • Thin slices. Under 2 cm it melts through the grate before crusting. Thickness is the whole trick.
  • Low heat. You want crust formation to outrun the melt. Hot surface, always.
  • Flipping early. If it resists the spatula, the crust is not ready. Wait.
  • Serving late. Cold provoleta is a rubber coaster. Bring the table to the cheese.

Is provoleta the same as provolone?

No. Provoleta is an Argentine cheese made in the style of provolone but firmer and drier, specifically so it can be grilled without collapsing. Regular provolone works as a substitute only in thick slices and a hot pan.
